I'm always looking for new and tasty ideas for breakfast that are quick and easy, and this recipe has the perfect blend of sweet and savoury and most importantly, it requires little to no prep time.
As much as I LOVE fresh pomegranate I buy the frozen bags from Coles, making them quick and easy to add to any recipe - (I recommend re-using the zip lock bags they come in to reduce your environmental impact too!)
- 2 slices multigrain bread
- 1 small avocado
- ¼ cup (50g) feta cheese, crumbled
- ¼ pomegranate, seeds
- mint leaves, to garnish
- Toast the bread to your liking.
- Remove the avocado flesh and mash it up with a fork, season with salt & pepper.
- Divide the avocado between the 2 slices of toasted bread.
- Crumble the feta cheese on top and sprinkle with pomegranate seeds.
- Garnish with mint leaves and serve.
