These energy balls are a game changer if you are anything like me - dashing out the door, rushing to teach a class or trying to get where I need to be on time! Make a big batch in advance, and pop them in the freezer for long-lasting freshness and a quick, easy quick grab-and-go nutritious snack for those days when you've run out of time in the morning.
A great option that will give you a little boost when you hit your mid-afternoon slump and save you a few $$ by being more organised and not having to buy food on the go.
Ingredients:
⅔ cup (80g) cranberries, dried, unsweetened
1 cup (80g) desiccated coconut
1 cup (95g) almond meal
2 tbsp. coconut oil
1 tbsp. honey
1 ½ tsp. lime zest
1 tbsp. lime juice
Method:
Place the cranberries into a food processor or high-speed blender and process until finely chopped.
Add the remaining ingredients and blitz until the mixture comes together. Roll into 12 balls.
Store the balls in an airtight container in the fridge for up to 2 weeks. Personally, I prefer to freeze them so they last longer (and I eat them slower haha)
